Killer Cranberry Bread
I love the taste of cranberries, try your hand at this Killer Cranberry Bread. I’ve been hooked on cranberries since I was a little boy. My first memory of cranberry was from a can, however I have been told that my first taste were fresh cranberries at a large family dinner. Regardless, this is my recipe for Killer Cranberry Bread. It is sweet and of course can be eaten all day long! The first time I made this was about 7 pm at a friends house during a dinner party and we baked it in an outdoor brick oven. The results were off the hook and it was devoured completely before it could even cool off. That’s what I call a hit!
This recipe is a spin off from the Simple Artisan Bread Recipe (click for the link to that). It has only been slightly changed, but the finished product is miles away from the original.
- 3 Cups All purpose white flour (non-enriched)
- 1/2 Tsp dry yeast
- 1 1/2 Tsp Salt
- 1/2 Cup sugar
- 1 Cup dried cranberries
- 1 1/2 Cup warm water
- Use large bowl
- Add all dry ingredients
- Mix well
- Add 1/2 Cup of warm water
- Mix into dough, should be sticky
- Let sit 12-24 hours
- Cooking:
- Pre-heat oven to 500 degrees with dutch oven and lid inside
- Shape dough into round loaf
- Dust top lightly with flour
- Make slits into top of bread to prevent cracking
- Place into pre-heated dutch oven
- Bake with lid on for 30 minutes
- Bake last 15 minutes with lid off
- Check with tooth pick
- Cool on cooling rack 15-20 minutes
- * Optional – Melt a few small pads of butter on top

Ok, Ok, Ok…. A huge lesson learned about 15 minutes ago (which I should have already know)…. Never go upstairs and get change clothes in the last “Crucial” 10 minutes of the bake! I came back down open the oven and was like “Arrghhhh Nooooooooo”. See, I have some friends coming over this morning (in about 20 minutes) and I have been talking about the Killer Cranberry Bread for three weeks, and I just burnt it. So guess what? I will be making this again again real soon, so I can get the no-burnt pictures.
